1 cup oatmeal
1/2 tsp. baking powder
3 eggs.
1 egg white
1/2 c. plain or greek style yogurt
1/2 tsp. vanilla
1 tsp. cinnamon
pinch of nutmeg
1/3 cup pumpkin, or 1 small banana, or any fruit at the end for extra protein or fat.
Optional: Throw in a few Tbsp. of Flaxmeal
Optional: Throw in some stevia if you are used to sweetened pancakes
Directions: Grind oatmeal to a fine powder in a blender of food processor. Then blend the rest of the ingredients to a smooth texture. Lightly spray griddle or pan and cook over medium heat.
I usually make a big batch and refrigerate them. I reheat in the toaster oven. Blake loves them as snacks or for breakfast.
