Ingredients:
2 eggs
1/2 c. pumpkin puree
1/3 c. honey
4 tbsp. melted butter
1 tsp. vanilla
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/4 tsp. ground ginger
2 1/2 cups Trader Joe's Almond Meal
1/2 c. chopped walnuts
1/2 c. raisins
My kids love these, and so does my husband. They don't last long at our house. Sometimes I substitute 1 1/2 tsp. pumpkin pie spice instead of the cinnamon. cloves, ginger, and nutmeg. It is much quicker. This recipe was taken from www.scdrecipe.com. You can also sub. agave nectar for the honey. Enjoy!!
Instructions:
1. Preheat oven to 325
2. In a large mixing bowl, use an electric beater to thoroughly combine all ingredients EXCEPT almong flour, walnuts, and raisins.
3. Stir in almond flour until well combined.
4. Stir in walnuts and raisins.
5. Spoon batter into muffin cups, using wet fingers to press down any bumps on the top before baking.
6. Bake for 25-30 minutes, until golden brown and a toothpick comes out clean.
