Preheat oven to 425
Open and rinse one can of garbanzos
Pat dry
Toss in olive oil
Grease bottom of pan with olive oil
Bake for 30 minutes
Add salt and enjoy. ( I spray with a little olive oil spray so the salt sticks)
I love salt, I eat these instead of chips. They turn out pretty crunchy and when you add lots of salt they satisfy my chip craving. I like them best fresh out of the oven.
You can play around with the recipe for different flavors. You can soak in Tamari for 30 minutes before baking for a soy salt taste. Or you can add garlic salt, or any of your favorote herbs or spices.

Power Smoothie
Ingredients:
1 C. water or almond milk
1 scoop Vegan Sun Warrior Protein or Fit365(chocolate or vanilla)
1 tbsp. Barlean's Highest Lignan Flax Oil
1 tbsp. Greens (I use Premier Research Labs Quantum Greens Mix)
1 tbsp. Whey Protein Powder ( I use Premier Research Labs)
Optional: 1 cup frozen berries
Blend until smooth
I eat this almost every morning except Sunday when J.P. makes me a scramble :o)

Damien's Breakfast Smoothie
Ingredients:
1 c. milk (not ultra pasteurized if possible)
1 c. vanilla cream top yogurt, or greek yogurt (can do plain too)
1 dash Trader Joe's stevia
1 C. frozen fruit (Damien likes strawberries, mango and sometimes a banana)
2 tsp. greens (we use Quantam Greens by Premiere Research Labs, but any greens will do)
Optional: Real Maple Syrup if it is not sweet enough for you
By real I do not mean Mrs. Butterworth's :o)
Blend all ingredients!!
My kids eat this for breakfast a few times per week and they love it!!

Banana Applesauce Muffins - gluten and dairy free
Ingredients:
1 C. Trader Joe's Almond Meal
1/2 C. oats
1/2 C applesauce
2 ripe bananas mashed
1 egg
1/3 tsp. baking soda
1 Tbsp. Maple Blend Agave Syrup or Pure Maple Syrup
Directions:
Mix almond flour, oats and baking soda together. Then add bananas, egg, applesauce and agave. Beat until smooth. Pour into baking cups 2/3 full. Bake at 350 for 30-35 minutes. When toothpick comes out clean they are finished. Let cool and store in an airtight container.
Just for the record...my kids love these but my husband says they are not his favorite. He says he likes the pumpkin ones a lot better. Maybe these are more of a kid food?? I love them all!

1/2 tsp. apple cider vinegar
1/2 tsp cinnamon
1/2 tsp nutmeg
Directions:
Smash bananas or put in a food processor. Add eggs and mix until smooth and creamy. Mix remaining ingredients together until smooth.
Pour in 3 mini loaf pans and bake for 40 minutes, or in a single large loaf pan for 50-55 minutes. Bake at 350

1/2 c. pumpkin puree
1/3 c. honey
4 tbsp. melted butter
1 tsp. vanilla
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/4 tsp. ground ginger
2 1/2 cups Trader Joe's Almond Meal
1/2 c. chopped walnuts
1/2 c. raisins
My kids love these, and so does my husband. They don't last long at our house. Sometimes I substitute 1 1/2 tsp. pumpkin pie spice instead of the cinnamon. cloves, ginger, and nutmeg.
